The Varney’s Tradition
Founded in 1981 by Will and Randi Varney, Varney’s Restaurant is a family-owned Long Island restaurant known for its fresh seafood and welcoming atmosphere. Located on Montauk Highway in Brookhaven, New York, it began as a small lunch spot and quickly became a local favorite. Will, a former clammer, brought his knowledge of Long Island seafood to the kitchen and Randi focused on creating a warm, down-to-earth dining experience that made customers feel like family.
Not long after opening, longtime friend and chef Bill Lengyel joined the team and helped shape the menu into what it is today. Bill introduced a range of classic Long Island dishes including lobster rolls, mussels, chowders, and more. His dedication to quality ingredients and rich, flavorful cooking helped define Varney’s as one of the best restaurants on Long Island.
Today, the next generation of the Varney family continues the tradition. Still family-run and focused on fresh, local seafood, Varney’s Restaurant remains a go-to destination for lobster rolls and other great food.
